Picking: Hand Harvest with Multiple Passes on the second third of October. Training Technique: Cordon.
Aging: Maturation in tonneaux followed by malolactic fermentation and 18-24 months ripening, aging in bottle for 12 months.
Colour: Limpid ruby red color.
Aroma: Scents of violets, red roses, carcadè (red hibiscus), pink pepper, pomegranate, and cumin. Mentholated freshness.
Taste: Fresh on the palate , with very fine tannins. It also has hummus, mineral, balsamic, and seaside cliff hints.
Food & Context Pairing: Stone-ground flour bread with seasoned salami, focaccia with roast pork or spit-roasted suckling pig, aged cheese, beef steak, duck, truffle.
